Parking Lot Picnic

Last weekend we had a BBQ with our neighbors.  Everyone prepared food and we enjoyed an afternoon of great company and beautiful weather!

I love chopping fresh vegetables and making a simple salad.  The best thing about these salads is you do not have to follow an “official” recipe.  Just cut fresh vegetables, add your favorite seasoning/herbs and enjoy!

Above left: fresh corn, red peppers, parsley, pineapple, red onions, garlic, black beans, lime juice, parsley, cilantro, cumin, black pepper, and chili powder.

Above right: fresh tomatoes, cucumbers, green peppers, red onions, garlic, chickpeas, basil, salt, pepper, and balsamic vinegar.

This is a slightly altered version of the previously posted Curry and Dijon Baked Chicken recipe.  I omitted the soy sauce, added fresh ginger, garlic, and lemon juice…and included the remaining ingredients of curry powder, honey (or apricot jam), black pepper, and crushed red pepper flakes.

One of our neighbors brought beef bulgogi.  According to Wikipedia…Bulgogi is made from thin slices of sirloin or other prime cut of beef.  The meat is marinated with a mixture of soy sauce, sugar, sesame oil, garlic and other ingredients such as scallions or mushrooms, especially white button mushrooms or shiitake.

Shawn was happy the neighbors made hamburgers! :)
